  • 3-4 slices fresh galangal (or substitute ginger)
  • 3-4 kaffir lime leaves, torn into pieces
  • 2-3 Thai bird’s eye chilies, sliced (adjust for heat)
  • 2 tablespoons fish sauce (to taste)
  • 1 tablespoon lime juice (or to taste)
  • 1 teaspoon sugar (optional)
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions:

1. Prepare the Base:

  • In a medium pot, bring the chicken broth and coconut milk to a gentle simmer over medium heat. Add the smashed lemongrass, galangal, and kaffir lime leaves. Let it simmer for 5-7 minutes to infuse the flavors.

2. Add the Chicken and Mushrooms:

  • Add the sliced chicken and mushrooms to the pot. Cook for 5-8 minutes, or until the chicken is cooked through and the mushrooms are tender.

3. Season the Soup:

  • Stir in the fish sauce, lime juice, and sugar (if using). Adjust the seasoning to your taste. If you like it spicier, add more chilies.

4. Serve:

  • Remove the lemongrass, galangal, and lime leaves from the soup before serving. Ladle the soup into bowls, garnish with fresh cilantro, and serve with lime wedges on the side for an extra burst of flavor.
