Cheesy Mashed Potato Puffs

Ingredients

  • 2 cups mashed potatoes (leftover or freshly made)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 green onions, finely chopped
  • 1 large egg, beaten
  • 1/4 cup flour (use gluten-free flour if needed)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Prepare the Potato Mixture:
    • In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, chopped green onions, beaten egg, flour, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly distributed.
  2. Form the Puffs:
    • Using a spoon or your hands, form the potato mixture into small balls or puffs, about the size of a golf ball. Flatten slightly to form patties if preferred.
  3. Preheat the Air Fryer:
    • Preheat your air fryer to 375°F (190°C) for about 3 minutes.
  4. Arrange the Puffs:
    • Lightly spray the air fryer basket with cooking spray. Arrange the potato puffs in a single layer in the basket, making sure they do not touch. You may need to cook in batches depending on the size of your air fryer.
  5. Cook the Puffs:
    • Air fry the potato puffs at 375°F (190°C) for 10-12 minutes. Flip them halfway through the cooking time to ensure they are evenly browned and crispy.
  6. Serve:
    • Remove the potato puffs from the air fryer and serve immediately. These are delicious on their own or with a dipping sauce like sour cream, ranch, or ketchup.

  • For extra flavor, you can add cooked and crumbled bacon or finely chopped herbs like parsley or chives to the potato mixture.
