  • 1/4 cup vegetable or chicken broth
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 tablespoons chopped fresh parsley, for garnish
  • Lemon wedges, for serving (optional)

Instructions:

  1. Prepare the Ingredients:
    • Cut the cauliflower into small florets and slice the mushrooms.
    • Mince the garlic.
  2. Cook the Cauliflower:
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
    • Add the cauliflower florets to the skillet and season with salt and black pepper. Sauté for about 5-7 minutes, until the cauliflower starts to brown and soften.
    • Remove the cauliflower from the skillet and set aside.
  3. Cook the Mushrooms:
    • In the same skillet, add the remaining 1 tablespoon of olive oil.
    • Add the sliced mushrooms and cook for about 5-7 minutes, stirring occasionally, until the mushrooms are browned and have released their moisture.
  4. Add Garlic and Herbs:
    • Reduce the heat to medium. Add the minced garlic, dried thyme, and dried rosemary to the skillet with the mushrooms. Cook for 1-2 minutes, stirring frequently, until the garlic is fragrant.
  5. Combine and Cook:
    • Return the cooked cauliflower to the skillet with the mushrooms and garlic. Stir to combine.
    • Pour in the vegetable or chicken broth and stir well. Cook for another 3-5 minutes, until the cauliflower is tender and the flavors are well combined.
  6. Finish and Serve:
    • If using, sprinkle grated Parmesan cheese over the top and stir until melted and combined.
    • Garnish with chopped fresh parsley.
    • Serve with lemon wedges on the side for a fresh, tangy finish if desired.
