Instructions:

  1. Sauté Aromatics:
    • In a large skillet or wok, heat coconut oil over medium heat. Add minced garlic and chopped onion. Sauté until the onion becomes translucent.
  2. Cook Shrimp:
    • Add the peeled and deveined shrimp to the skillet. Cook for 2-3 minutes per side or until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.
  3. Sauté Vegetables:
    • In the same skillet, add sliced red bell pepper. Sauté for a couple of minutes until the pepper is slightly softened.
  4. Create Coconut Sauce:
    • Pour in the coconut milk, ground turmeric, ground coriander, paprika, and chili flakes. Stir well to combine the spices with the coconut milk.
  5. Season and Simmer:
    • Season the sauce with salt and black pepper to taste. Allow the sauce to simmer for 5-7 minutes to thicken and let the flavors meld.
  6. Return Shrimp to Skillet:
    • Return the cooked shrimp to the skillet, stirring them into the coconut sauce. Let them heat through for an additional 2-3 minutes.
  7. Serve:
    • Serve the shrimp with garlic and coconut milk over cooked rice or noodles. Garnish with fresh cilantro.
