Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Season Chicken:
    • Season chicken breasts with salt and black pepper on both sides.
  2. Sear Chicken:
    • In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear on both sides until golden brown. Remove chicken from the skillet and set aside.
  3. Sauté Onion and Garlic:
    • In the same skillet, add chopped onion and sauté until softened. Add minced garlic and cook for an additional 1-2 minutes.
  4. Cook Mushrooms:
    • Add sliced mushrooms to the skillet and cook until they release their moisture and become golden brown.
  5. Add Herbs and Deglaze:
    • Stir in dried thyme and rosemary. Pour in chicken broth, scraping the bottom of the skillet to deglaze and incorporate any flavorful bits.
  6. Simmer and Add Cream:
    • Reduce heat to medium-low, return the seared chicken to the skillet, and pour in heavy cream. Simmer for 15-20 minutes or until the chicken is cooked through and the sauce has thickened.
  7. Check for Seasoning:
    • Taste the sauce and adjust the seasoning if needed, adding more salt or pepper.
  8. Garnish and Serve:
    • Garnish with chopped fresh parsley if desired. Serve the smothered chicken with mushrooms over rice, pasta, or mashed potatoes.
