Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- Chopped fresh parsley for garnish (optional)
Instructions:
- Season Chicken:
- Season chicken breasts with salt and black pepper on both sides.
- Sear Chicken:
- In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear on both sides until golden brown. Remove chicken from the skillet and set aside.
- Sauté Onion and Garlic:
- In the same skillet, add chopped onion and sauté until softened. Add minced garlic and cook for an additional 1-2 minutes.
- Cook Mushrooms:
- Add sliced mushrooms to the skillet and cook until they release their moisture and become golden brown.
- Add Herbs and Deglaze:
- Stir in dried thyme and rosemary. Pour in chicken broth, scraping the bottom of the skillet to deglaze and incorporate any flavorful bits.
- Simmer and Add Cream:
- Reduce heat to medium-low, return the seared chicken to the skillet, and pour in heavy cream. Simmer for 15-20 minutes or until the chicken is cooked through and the sauce has thickened.
- Check for Seasoning:
- Taste the sauce and adjust the seasoning if needed, adding more salt or pepper.
- Garnish and Serve:
- Garnish with chopped fresh parsley if desired. Serve the smothered chicken with mushrooms over rice, pasta, or mashed potatoes.
