Soft sourdough rolls

Description:

These Soft Sourdough Rolls are fluffy, tangy, and perfect for dinner rolls, sandwiches, or as a snack. They are made with an active sourdough starter, giving them a light texture and a deep, complex flavor.

Ingredients:

For the Dough:

  • 1 cup (240g) active sourdough starter (fed and bubbly)
  • 1 cup (240ml) warm milk (or dairy-free alternative)
  • 3 tablespoons unsalted butter (or dairy-free alternative), melted
  • 2 tablespoons sugar or honey
  • 3 cups (360g) all-purpose flour (or bread flour for a chewier texture)
  • 1 1/2 teaspoons salt

Instructions:

1. Prepare the Dough:

  • In a large mixing bowl, whisk together the active sourdough starter, warm milk, melted butter, and sugar until combined.
  • Add the flour and salt, and mix until a soft dough forms.

2. Knead the Dough:

  • Turn the dough onto a lightly floured surface and knead for 8-10 minutes, until smooth and elastic. The dough should be soft but not sticky. Add more flour as needed.

(If using a stand mixer with a dough hook, knead on medium speed for 6-8 minutes.)

3. First Rise (Bulk Fermentation):

  • Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 3-4 hours, or until doubled in size. The rise time may vary depending on the strength of your sourdough starter and room temperature.

4. Shape the Rolls:

  • Once the dough has risen, punch it down gently. Divide the dough into 12 equal pieces and shape each piece into a round roll. Place the rolls on a greased or parchment-lined baking sheet, leaving space between them.

5. Second Rise (Proofing):

  • Cover the rolls with a damp cloth and let them rise for another 2-3 hours, or until they have puffed up.

6. Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

7. Bake the Rolls:

  • Bake the rolls in the preheated oven for 20-25 minutes, or until they are golden brown on top and sound hollow when tapped on the bottom.

8. Cool:

  • Remove the rolls from the oven and let them cool slightly on a wire rack before serving.
