Title: Spicy Steamed Dumplings

Ingredients:

For the Dumpling Filling:

  • 1 pound (450g) ground pork or chicken
  • 1 cup finely chopped cabbage
  • 1/2 cup chopped green onions
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 teaspoon sugar
  • 1 teaspoon chili oil (adjust to your spice preference)
  • Salt and black pepper to taste

For the Dumpling Wrapper:

  • Store-bought dumpling wrappers or homemade dumpling dough

For the Dipping Sauce:

  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon chili flakes (optional, for extra heat)
  • Chopped green onions for garnish

Instructions:

Dumpling Filling:

  1. Prepare Filling Mixture:
    • In a large bowl, combine ground pork or chicken, chopped cabbage, green onions, soy sauce, sesame oil, oyster sauce, rice vinegar, minced ginger, minced garlic, sugar, chili oil, salt, and black pepper. Mix the filling thoroughly.

Dumpling Wrapping:

  1. Assemble Dumplings:
    • Place a small spoonful of the filling in the center of each dumpling wrapper. Moisten the edges of the wrapper with water and fold it over the filling, creating a half-moon shape. Press the edges to seal the dumpling.
  2. Shape Dumplings:
    • Use your preferred method to shape the dumplings. You can pleat the edges or fold them into a crescent shape.

Steaming Dumplings:

  1. Prepare Steamer:
    • Set up a steamer and line the steamer basket with parchment paper or cabbage leaves to prevent sticking.
  2. Steam Dumplings:
    • Place the assembled dumplings in the steamer, leaving space between each dumpling to prevent sticking. Steam for approximately 15-20 minutes or until the dumplings are cooked through.

Dipping Sauce:

  1. Prepare Dipping Sauce:
    • In a small bowl, mix together soy sauce, rice vinegar, sesame oil, sugar, and chili flakes (if using). Stir until the sugar is dissolved.

Serve:

  1. Garnish and Serve:
    • Once the dumplings are steamed, remove them from the steamer. Garnish with chopped green onions and serve hot with the prepared dipping sauce.

Time and Intensity:

  • Preparation Time: 30 minutes
  • Cooking Time: 15-20 minutes
  • Total Time: Approximately 50 minutes
  • Intensity: Moderate

Note: Adjust the spice level by varying the amount of chili oil in the filling and the chili flakes in the dipping sauce. Experiment with different folding techniques for the dumplings. Enjoy these spicy steamed dumplings as a delicious appetizer or a satisfying meal!
