 Instructions

  2. Add onions and cook until softened, about 3–4 minutes.

  4. Add zucchini (and squash, if using) and sauté until just tender but not mushy — about 5–7 minutes.

  5. Remove from heat and set aside to cool slightly.

Tip: If the zucchini releases a lot of water, drain or pat dry slightly so the casserole doesn’t become watery.
