The Ultimate Chicken Noodle Soup

Ingredients:
- 1 lb boneless, skinless chicken breasts, cooked and shredded
- 8 cups chicken broth (low sodium)

- 3 celery stalks, sliced
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 2 cups egg noodles
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare Chicken:
- Cook the chicken breasts by boiling or baking until fully cooked. Shred the chicken using two forks and set aside.
- Sauté Vegetables:
- In a large pot, heat olive oil over medium heat. Add chopped onions, minced garlic, sliced carrots, and sliced celery. Sauté until the vegetables are softened.
- Add Herbs and Seasonings:
- Stir in dried thyme, dried rosemary, bay leaf, salt, and black pepper. Cook for an additional 2 minutes to allow the flavors to meld.
- Pour in Chicken Broth:
- Add chicken broth to the pot. Bring the mixture to a boil and then reduce the heat to simmer. Let it simmer for 15-20 minutes to develop flavors.
- Cook Egg Noodles:
- In a separate pot, cook the egg noodles according to the package instructions. Drain and set aside.
- Combine Chicken and Noodles:
- Add the shredded chicken and cooked egg noodles to the pot. Simmer for an additional 5-7 minutes until the noodles are heated through.
- Check for Seasoning:
- Taste the soup and adjust the seasoning if needed.
- Remove Bay Leaf:
- Before serving, don’t forget to remove the bay leaf from the soup.
- Serve:
