German Pancake
Description
German Pancakes, also known as Dutch Babies, are fluffy, oven-baked pancakes that puff up dramatically as they cook. They are easy to make, delicious, and perfect for breakfast or brunch!
Ingredients
3 large eggs
¾ cup whole milk (or dairy-free milk for a dairy-free version)
¾ cup all-purpose flour (or gluten-free flour blend)
1 tablespoon sugar
½ teaspoon vanilla extract
¼ teaspoon salt
2 tablespoons unsalted butter (or dairy-free alternative)
Optional Toppings:
Powdered sugar
Fresh berries
Lemon juice
Maple syrup
Instructions
Step 1: Preheat the Oven
Preheat your oven to 425°F (220°C).
Place a 10-inch ovenproof skillet or pie dish in the oven to heat while you prepare the batter.
Step 2: Prepare the Batter
In a blender or large mixing bowl, combine eggs, milk, flour, sugar, vanilla extract, and salt. Blend or whisk until smooth and lump-free. Let the batter rest for 5 minutes.
Step 3: Heat the Butter
Carefully remove the hot skillet from the oven.
Add the butter to the skillet and swirl it around to coat the bottom and sides.
Step 4: Bake the Pancake
Pour the batter into the hot, buttered skillet.
Return the skillet to the oven and bake for 15-20 minutes, or until the pancake is puffed and golden brown around the edges.
Step 5: Serve
Remove the pancake from the oven and sprinkle with powdered sugar, if desired.
Serve immediately with your favorite toppings.
Tips:
The pancake will deflate slightly as it cools—this is normal.
For a sweeter pancake, increase the sugar to 2 tablespoons.
