Classic Chicken Noodle Soup
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded or diced
- 2 cups egg noodles (or any preferred noodles)
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Directions:
- Sauté Aromatics:
- In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion, sliced carrots, and sliced celery. Sauté for about 5 minutes until the vegetables begin to soften.
- Add Garlic and Broth:
- Add minced garlic to the pot and cook for another minute until fragrant.
- Pour in the chicken broth, bring to a boil, then reduce heat to a simmer.
- Add Chicken and Seasonings:
- Add the cooked chicken, bay leaf, dried thyme, salt, and pepper to the pot. Stir to combine.
- Cook Noodles:
- Meanwhile, in a separate pot, cook the egg noodles according to package instructions until they’re al dente. Drain and set aside.
- Simmer Soup:
- Let the soup simmer for about 20-25 minutes to allow the flavors to meld and the vegetables to become tender.
- Add Noodles and Serve:
- Add the cooked noodles to the pot just before serving to prevent them from becoming mushy. Discard the bay leaf.
- Taste the soup and adjust seasoning if needed.
- Garnish and Serve:
- Ladle the chicken noodle soup into bowls. Garnish with fresh parsley if desired.
