Classic Chicken Noodle Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded or diced
  • 2 cups egg noodles (or any preferred noodles)
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Directions:

  1. Sauté Aromatics:
    • In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion, sliced carrots, and sliced celery. Sauté for about 5 minutes until the vegetables begin to soften.
  2. Add Garlic and Broth:
    • Add minced garlic to the pot and cook for another minute until fragrant.
    • Pour in the chicken broth, bring to a boil, then reduce heat to a simmer.
  3. Add Chicken and Seasonings:
    • Add the cooked chicken, bay leaf, dried thyme, salt, and pepper to the pot. Stir to combine.
  4. Cook Noodles:
    • Meanwhile, in a separate pot, cook the egg noodles according to package instructions until they’re al dente. Drain and set aside.
  5. Simmer Soup:
    • Let the soup simmer for about 20-25 minutes to allow the flavors to meld and the vegetables to become tender.
  6. Add Noodles and Serve:
    • Add the cooked noodles to the pot just before serving to prevent them from becoming mushy. Discard the bay leaf.
    • Taste the soup and adjust seasoning if needed.
  7. Garnish and Serve:
    • Ladle the chicken noodle soup into bowls. Garnish with fresh parsley if desired.
