Title: Air Fryer Chicken Fajitas

Ingredients:

For the Chicken Marinade:

  • 1 pound (450g) boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste

For the Fajita Vegetables:

  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow onion, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste

For Serving:

  • Flour or corn tortillas
  • Guacamole
  • Sour cream
  • Salsa
  • Shredded cheese
  • Fresh cilantro, chopped
  • Lime wedges

Instructions:

Prepare the Chicken:

  1. Marinate Chicken:
    • In a bowl, combine sliced chicken breasts with olive oil, lime juice, ground cumin, chili powder, smoked paprika, garlic powder, onion powder, salt, and black pepper. Toss to coat the chicken evenly. Let it marinate for at least 30 minutes.

Prepare the Fajita Vegetables:

  1. Preheat Air Fryer:
    • Preheat your air fryer to 375°F (190°C).
  2. Slice Vegetables:
    • In a separate bowl, combine sliced red and green bell peppers, and sliced yellow onion. Toss with olive oil, ground cumin, chili powder, smoked paprika, salt, and black pepper.
  3. Air Fry Vegetables:
    • Spread the seasoned vegetables in the air fryer basket. Air fry for 12-15 minutes, shaking the basket or stirring halfway through, until the vegetables are tender and slightly charred.

Cook the Chicken:

  1. Air Fry Chicken:
    • Remove the vegetables from the air fryer basket and add the marinated chicken. Air fry for 10-12 minutes, shaking the basket or stirring halfway through, until the chicken is cooked through and slightly caramelized.
  2. Combine and Serve:
    • Combine the air-fried chicken with the air-fried vegetables in the air fryer basket for the last 2 minutes of cooking to warm them together.
  3. Serve:
    • Serve the Air Fryer Chicken Fajitas in tortillas with your favorite toppings such as guacamole, sour cream, salsa, shredded cheese, and chopped cilantro. Garnish with lime wedges.
