    • 1/2 cup (50g) panko breadcrumbs

    • 1/2 cup (120ml) grated zucchini (squeeze out excess liquid)
    • 1 small onion, finely chopped
    • 1 garlic clove, minced
    • 1 egg, lightly beaten
    • 1 tablespoon chopped fresh parsley or dill (optional)
    • Salt and pepper to taste
  • For serving (optional):
    • Mayonnaise
    • Dijon mustard
    • Lemon wedges
    • Salad greens

Instructions:

  1. Preheat your air fryer to 200°C (400°F).
  2. In a large bowl, combine the ground chicken, breadcrumbs, parmesan cheese, zucchini, onion, garlic, egg, parsley (if using), salt, and pepper. Mix well until everything is evenly distributed.
  3. Form the mixture into 8-10 equal-sized patties.
  4. Lightly spray the air fryer basket with cooking spray (optional). Place the rissoles in the basket, making sure they don’t touch.
  5. Cook for 12-15 minutes, flipping halfway through cooking, until golden brown and cooked through. An internal temperature of 165°F (74°C) is safe for consumption.
  6. Serve hot with your desired accompaniments, such as mayonnaise, Dijon mustard, lemon wedges, or a side salad.

Tips:

  • If your air fryer basket is small, you may need to cook the rissoles in batches.
  • For a crispier texture, you can pre-cook the onion and garlic in a pan with a little olive oil before adding them to the mixture.
