Ingredients:

  • 6 slices of deli ham (preferably thick-cut)
  • 6 large eggs
  • 1/2 cup shredded cheddar cheese (or your favorite cheese)
  • Salt and black pepper, to taste
  • Chopped fresh chives or parsley, for garnish (optional)
  • Cooking spray or a small amount of olive oil

Instructions:

  1. Preheat the Air Fryer:
    • Preheat your air fryer to 350°F (175°C) for about 3-5 minutes.
  2. Prepare the Ham Cups:
    • Lightly spray the insides of silicone muffin cups or a silicone muffin tray with cooking spray or brush with a small amount of olive oil.
    • Place one slice of ham into each muffin cup, pressing it down to form a cup shape. The edges of the ham should come up the sides of the cup.
  3. Add Cheese:
    • Sprinkle a small amount of shredded cheese into the bottom of each ham cup.
  4. Add the Eggs:
    • Crack one egg into each ham cup on top of the cheese. Season with salt and black pepper to taste.
  5. Air Fry the Ham and Egg Cups:
    • Carefully place the filled muffin cups into the preheated air fryer basket.
    • Air fry at 350°F (175°C) for 10-12 minutes, or until the eggs are cooked to your desired level of doneness. For a runny yolk, check around the 8-10 minute mark; for a firmer yolk, cook a bit longer.
  6. Garnish and Serve:
    • Once done, carefully remove the ham and egg cups from the air fryer.
    • Garnish with chopped fresh chives or parsley if desired.
    • Serve immediately while hot.

Tips:

  • You can customize these breakfast cups by adding additional ingredients such as diced bell peppers, spinach, or onions along with the cheese before adding the egg.
  • For a spicier version, add a few drops of hot sauce or a sprinkle of red pepper flakes on top of the eggs before cooking.
