Hunter’s Chicken, traditionally known as Pollo alla Cacciatora, is a rustic dish that evokes images of slow-simmered pots in countryside kitchens. Our version reimagines this classic for the modern home cook, harnessing the speed and convenience of the air fryer to deliver deep, smoky-sweet flavors and perfectly cooked chicken in a fraction of the time. It’s the ultimate comfort food, made simple.

Ingredients

For the Chicken:

  • 2 boneless, skinless chicken breasts (approx. 150g / 5oz each)

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • ½ tsp garlic powder

  • ½ tsp dried thyme

  • Salt and freshly ground black pepper, to taste

  • 4 slices of smoked streaky bacon

  • 60g (2oz) mature cheddar cheese, grated

For the Smoky BBQ Sauce:

  • 120ml (½ cup) tomato passata (or smooth tomato sauce)

  • 2 tbsp BBQ sauce (smoky variety works best)

  • 1 tbsp Worcestershire sauce

  • 1 tbsp dark brown sugar

  • 1 tsp Dijon mustard

  • 1 small onion, finely diced

  • 1 clove garlic, minced

  • Salt and pepper to taste

To Serve (Optional):

  • Creamy mashed potatoes or fluffy rice

  • Steamed green beans or buttered peas

  • Fresh parsley, chopped, for garnish

Instructions

1. Prepare the Chicken & Sauce (10 minutes)

  • Prepare the Chicken: Pat the chicken breasts completely dry with kitchen paper. Place them on a board and make a deep horizontal slit along the side of each breast to create a pocket, being careful not to cut all the way through. Drizzle with olive oil.

  • Make the Rub: In a small bowl, mix the smoked paprika, garlic powder, dried thyme, salt, and pepper. Rub this mixture all over the chicken breasts, including inside the pockets. Set aside.

  • Make the Sauce: In a small saucepan over medium heat, add a drizzle of oil. Sauté the diced onion for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant. Stir in the passata, BBQ sauce, Worcestershire sauce, brown sugar, and Dijon mustard. Season with a pinch of salt and pepper. Bring to a gentle simmer, then reduce heat and let it bubble softly for 5-7 minutes until slightly thickened. Remove from heat.

2. Assemble the Chicken (5 minutes)

  • Take two slices of bacon and wrap each one around a seasoned chicken breast, securing the ends with a toothpick. The bacon should help keep the pocket closed.

  • Spoon about half of the prepared smoky BBQ sauce inside the pocket of each chicken breast.

  • Divide the grated cheddar cheese and stuff it into the pocket on top of the sauce.

3. Air Fry (15-18 minutes)

  • Preheat your air fryer to 190°C (375°F) for 3 minutes.

  • Place the stuffed, bacon-wrapped chicken breasts in the air fryer basket, leaving space between them for air circulation.

  • Air fry for 12 minutes.

  • After 12 minutes, carefully open the basket. Brush or spoon the remaining BBQ sauce generously over the top of each chicken breast.

  • Return to the air fryer and cook for a further 3-6 minutes, or until the chicken is cooked through (the internal temperature should reach 74°C / 165°F), the bacon is crisp, and the cheese is molten and bubbling.

  • Pro Tip: Cooking times can vary slightly between air fryer models. If your chicken breasts are particularly thick, they may need an extra 2-3 minutes.

4. Rest & Serve (5 minutes)

  • Once cooked, remove the chicken from the air fryer basket, discard the toothpicks, and let it rest on a warm plate for 5 minutes. This allows the juices to redistribute, ensuring tender, moist chicken.

  • While the chicken rests, you can gently reheat any leftover sauce with a splash of water to loosen it, creating a perfect pouring gravy.

  • Serve each chicken breast on a bed of creamy mash or fluffy rice, with steamed greens on the side. Spoon over any extra sauce, garnish with fresh parsley, and enjoy immediately.
