Vegetable noodle stir fry

Ingredients:

  • 8 ounces (225g) rice noodles or your preferred noodles
  • 2 tablespoons sesame oil, divided
  • 2 cloves garlic, minced

  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 medium carrot, julienned
  • 1 cup broccoli florets
  • 1 cup snow peas, trimmed
  • 1 cup sliced mushrooms
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or brown sugar
  • 2 green onions, thinly sliced (for garnish)
  • Sesame seeds (for garnish, optional)

Instructions:

  1. Prepare Noodles:
    • Cook the rice noodles according to the package instructions until al dente. Drain and set aside.
  2. Preheat Blackstone Griddle:
    • Preheat your Blackstone griddle to medium-high heat.
  3. Sauté Aromatics:
    • Heat 1 tablespoon of sesame oil on the griddle. Add the minced garlic and ginger, and sauté for 1-2 minutes until fragrant.
  4. Add Vegetables:
    • Add the sliced bell peppers, julienned carrot, broccoli florets, snow peas, and sliced mushrooms to the griddle. Stir-fry the vegetables for 5-6 minutes until they are tender-crisp and slightly charred.
  5. Prepare Sauce:
    • In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, and honey or brown sugar.
  6. Combine Noodles and Vegetables:
    • Push the cooked vegetables to one side of the griddle. Add the remaining tablespoon of sesame oil to the empty space on the griddle and add the cooked rice noodles. Pour the prepared sauce over the noodles and toss to combine with the vegetables until everything is evenly coated.
  7. Finish and Serve:
    • Cook for an additional 2-3 minutes, stirring occasionally, until the noodles are heated through and the sauce has thickened slightly.
    • Garnish the vegetable noodle stir-fry with thinly sliced green onions and sesame seeds, if desired.
  8. Serve Hot:
