Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1/2 pound Italian sausage, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 large red bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 medium red onion, sliced
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1/2 cup chicken broth
  • 1/4 cup white wine vinegar
  • 1/4 cup pickled cherry peppers, sliced (or more to taste)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken:
    • Season the chicken thighs with salt and pepper on both sides.
    • Heat the olive oil in a large ovenproof skillet over medium-high heat.
    • Add the chicken thighs, skin-side down, and cook until the skin is golden brown and crispy, about 5-7 minutes. Flip and cook for another 3-4 minutes. Remove the chicken and set aside.
  3. Cook the Sausage:
    • In the same skillet, add the sausage pieces and cook until browned on all sides, about 5 minutes. Remove the sausage and set aside.
  4. Sauté the Vegetables:
    • Add the sliced bell peppers and red onion to the skillet. Cook until they begin to soften, about 5 minutes.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
  5. Deglaze the Pan:
    • Pour in the white wine and scrape up any browned bits from the bottom of the skillet.
    • Let the wine simmer for about 2 minutes.
  6. Combine Ingredients:
    • Add the chicken broth, white wine vinegar, pickled cherry peppers, oregano, and thyme to the skillet.
    • Return the chicken thighs and sausage to the skillet, nestling them among the vegetables.
  7. Bake the Dish:
    • Transfer the skillet to the preheated oven.
    • Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Serve:
    • Remove the skillet from the oven and let it rest for a few minutes.
    • Garnish with freshly chopped parsley before serving.

Tips

  • Chicken: You can use boneless, skinless chicken thighs or breasts if preferred, but adjust the cooking time accordingly.
  • Sausage: Hot Italian sausage adds a nice kick, but you can use sweet Italian sausage if you prefer a milder flavor.
  • Cherry Peppers: Adjust the amount of pickled cherry peppers to your taste for more or less heat.
