Ingredients
- 4 slices of bread (your choice)
- 4 large eggs
- 2 tablespoons milk
- Salt and pepper, to taste
- 2 tablespoons butter, divided
- 4 slices of cheese (cheddar, American, or your favorite)
- Optional: chopped herbs (chives, parsley) for garnish
Instructions
- Prepare the Eggs:
- In a medium bowl, whisk together the eggs, milk, salt, and pepper.
- Heat 1 tablespoon of butter in a non-stick skillet over medium heat.
- Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are just set and scrambled. Remove from heat.
- Assemble the Sandwiches:
- Butter one side of each slice of bread with the remaining 1 tablespoon of butter.
- Place 2 slices of bread, butter-side down, on a cutting board or plate.
- Top each slice with a slice of cheese, followed by half of the scrambled eggs.
- Add another slice of cheese on top of the eggs, then top with the remaining slices of bread, butter-side up.
- Cook the Sandwiches:
- Heat a clean skillet or griddle over medium heat.
- Place the assembled sandwiches in the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
- Serve:
- Remove the sandwiches from the skillet and let them cool slightly.
- Slice in half if desired, and garnish with chopped herbs if using.
