Scrambled Egg Grilled Cheese Sandwich

Ingredients

  • 4 slices of bread (your choice)
  • 4 large eggs
  • 2 tablespoons milk
  • Salt and pepper, to taste
  • 2 tablespoons butter, divided
  • 4 slices of cheese (cheddar, American, or your favorite)
  • Optional: chopped herbs (chives, parsley) for garnish

Instructions

  1. Prepare the Eggs:
    • In a medium bowl, whisk together the eggs, milk, salt, and pepper.
    • Heat 1 tablespoon of butter in a non-stick skillet over medium heat.
    • Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are just set and scrambled. Remove from heat.
  2. Assemble the Sandwiches:
    • Butter one side of each slice of bread with the remaining 1 tablespoon of butter.
    • Place 2 slices of bread, butter-side down, on a cutting board or plate.
    • Top each slice with a slice of cheese, followed by half of the scrambled eggs.
    • Add another slice of cheese on top of the eggs, then top with the remaining slices of bread, butter-side up.
  3. Cook the Sandwiches:
    • Heat a clean skillet or griddle over medium heat.
    • Place the assembled sandwiches in the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
  4. Serve:
    • Remove the sandwiches from the skillet and let them cool slightly.
    • Slice in half if desired, and garnish with chopped herbs if using.

  • Cheese: Mix and match cheeses for a more complex flavor. Sharp cheddar and Monterey Jack make a great combination.
  • Add-Ins: You can add cooked bacon, ham, or sautéed vegetables (like spinach or mushrooms) to the scrambled eggs for extra flavor.
