Apple Fritter Discard

Ingredients:

  • 1 cup sourdough discard (unfed)
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup milk (or more if needed)
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled, cored, and diced
  • Vegetable oil for frying

For the Glaze:

  • 1 cup powdered sugar
  • 1-2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions:

Step 1: Prepare the Fritter Batter

  1. In a large mixing bowl, whisk together the sourdough discard, flour, sugar, baking powder, cinnamon, nutmeg (if using), and salt.
  2. In a separate bowl, whisk the eggs, milk, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until combined. The batter should be thick but spoonable. If it’s too thick, add a bit more milk.
  4. Fold in the diced apples until evenly distributed.

Step 2: Heat the Oil

  1. Heat about 1-2 inches of vegetable oil in a heavy-bottomed skillet or deep pot to 350°F (175°C).
  2. Use a thermometer to ensure the oil reaches the right temperature for frying.

Step 3: Fry the Fritters

  1. Drop spoonfuls of batter (about 2 tablespoons per fritter) into the hot oil, being careful not to overcrowd the pan.
  2. Fry the fritters for 2-3 minutes on each side, until golden brown and cooked through.
  3. Use a slotted spoon to remove the fritters from the oil and place them on a paper towel-lined plate to drain.

Step 4: Make the Glaze

  1. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  2. Drizzle the glaze over the warm fritters, or dip the fritters into the glaze for a thicker coating.

Step 5: Serve

  1. Let the fritters cool slightly before serving.
  2. Enjoy warm with your favorite coffee or tea!
