    • 1 medium onion, finely chopped
    • 2 cloves garlic, minced
    • 1 cup breadcrumbs (or crushed pork rinds for low-carb)
    • 2 eggs, lightly beaten
    • 1/2 cup milk (or heavy cream)
    • 2 tablespoons Worcestershire sauce
    • 1 tablespoon Dijon mustard
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon smoked paprika (optional)
  • For the Topping:
    • 1/4 cup ketchup (or sugar-free ketchup for low-carb)
    • 1 tablespoon Dijon mustard

Instructions:

1. Preheat the Oven:

  • In a large mixing bowl, combine the ground beef, crumbled bacon, Swiss cheese, sautéed mushrooms and onions, breadcrumbs (or pork rinds), eggs, milk, Worcestershire sauce, Dijon mustard, salt, pepper, and smoked paprika (if using). Mix everything together until just combined—avoid overmixing to keep the meatloaf tender.

4. Shape the Meatloaf:

  • Transfer the meatloaf mixture into a loaf pan or shape it into a loaf on the prepared baking sheet.

5. Prepare the Topping:

  • In a small bowl, mix together the ketchup, Dijon mustard, and Worcestershire sauce. Spread this mixture evenly over the top of the meatloaf.

6. Bake the Meatloaf:

  • Place the meatloaf in the preheated oven and bake for 60-70 minutes, or until the internal temperature reaches 160°F (71°C).

7. Rest and Serve:

  • Once done, remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This will help the juices redistribute and keep the meatloaf moist.
