 Ingredients

Chicken:

  • 2 ½ to 3 lbs bone-in, skin-on chicken (drumsticks, thighs, or split breasts)

  • 1 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • ½ tsp onion powder

Barbecue Glaze:

  • 1 cup BBQ sauce (store-bought or homemade)

  • 1 tbsp honey (optional, for extra stickiness)

  • 1 tsp apple cider vinegar (optional, for tang)

 Instructions

Step 1: Preheat and Prep

  1. Preheat your oven to 400°F (200°C).

  2. Line a rimmed baking sheet with aluminum foil and set a wire rack on top (optional but recommended for crispier skin).

Step 2: Season the Chicken

  1. Pat the chicken pieces dry with paper towels — this helps the skin get golden.

  2. Rub with olive oil, then sprinkle evenly with the seasoning blend:

    • Salt

    • Black pepper

    • Garlic powder

    • Smoked paprika

    • Onion powder

  3. Place chicken on the prepared baking rack or directly on the foil-lined sheet.

Step 3: Bake

  1. Bake for 30–35 minutes, until the internal temperature reaches 160°F (71°C).

  2. Remove from the oven and brush generously with BBQ sauce on all sides.

Step 4: Glaze and Finish

  1. Return the chicken to the oven and bake for another 10–15 minutes, or until:

    • Sauce is sticky and caramelized

    • Chicken reaches 165°F (74°C) internal temperature

  2. Optional: Broil for 2–3 minutes for extra caramelization. Watch closely!

Step 5: Rest and Serve

  • Let the chicken rest for 5 minutes before serving.

  • Garnish with chopped parsley or scallions if desired.
