 Ingredients

  • 3 cups all-purpose flour

  • 1 tbsp baking powder

  • 1/2 tsp salt

  • 1–2 tbsp sugar (for a slightly sweet bannock)

  • 1/2 cup raisins or dried fruit

  • Cheese, bacon bits, or onions for extra flavor

 Basic Instructions (Baked Version)

 Step 1: Mix Dry Ingredients

  1. In a large bowl, whisk together:

    • 3 cups flour

    • 1 tbsp baking powder

    • 1/2 tsp salt

  2. Stir in optional sugar or other dry mix-ins if using.

 Step 2: Add Liquid

  1. Add oil or melted butter if using.

  2. Gradually pour in the water or milk, stirring until a soft, sticky dough forms.

    Add a bit more flour if too wet, or more water if too dry.

 Step 3: Shape

  1. Lightly flour your hands and a work surface.

  2. Gently knead dough 4–6 times until it just comes together.

  3. Pat into a round disk, about 1 inch thick.

 Step 4: Bake

  1. Preheat oven to 400°F (200°C).

  2. Place the dough on a greased baking sheet or cast iron skillet.

  3. Cut a small “X” in the top to help it bake evenly.

  4. Bake for 20–25 minutes, or until golden brown and hollow-sounding when tapped.

  5. Let cool slightly before slicing.

 Frying Method (Pan Bannock)

  1. Divide dough into smaller balls or patties (about palm-sized).

  2. Heat 1/4 inch of oil in a skillet over medium heat.

  3. Fry each piece for 3–4 minutes per side, or until golden and cooked through.

  4. Drain on paper towels. Serve warm.

 Campfire Method

  1. Roll the dough into long strips.

  2. Wrap around a clean, greased stick.

  3. Cook over the fire, rotating frequently, until browned and cooked through (10–15 minutes).

 Serving Ideas

Bannock is delicious served with:

  • Butter and jam

  • Honey or maple syrup

  • Soup, stew, or chili

  • Eggs and bacon for a hearty breakfast

  • Or used as a flatbread for wraps or tacos

 Storage

  • Room Temp: Store wrapped for 1–2 days

  • Fridge: Keeps well for 3–4 days

  • Freezer: Freeze for up to 2 months. Thaw and reheat in oven or skillet.
