Ingredients

For the Bannock (Makes 4 flatbreads):

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • 1/2 tsp salt

  • 2 tbsp oil or melted lard

  • 3/4 cup warm water or milk (adjust as needed)

  • Oil for frying (if pan-frying the bannock)

For the Burger Patties:

  • 1 lb (450g) ground beef (or bison, elk, or moose for a traditional touch)

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt and pepper, to taste

  • Optional: 1 tbsp Worcestershire sauce or BBQ sauce

  • Cheese slices (optional)

Toppings (Customize as You Like):

  • Lettuce or spinach

  • Tomato slices

  • Sliced red onion

  • Pickles

  • Ketchup, mustard, mayo, BBQ sauce

  • Cooked bacon or sautéed mushrooms (optional)

Instructions

 Step 1: Make the Bannock

  1. In a mixing bowl, whisk together flour, baking powder, and salt.

  2. Stir in oil or melted fat, then gradually add warm water or milk, mixing until a soft, non-sticky dough forms.

  3. Knead gently on a floured surface for 1–2 minutes.

  4. Divide into 4 equal pieces and flatten each into a round disk about 1/2 inch thick.

 Cook the Bannock:

Option A – Pan-fried (Traditional & Crispier):

  • Heat 1/4 inch of oil in a heavy skillet over medium heat.

  • Fry each bannock round for 3–4 minutes per side, or until golden brown and cooked through.

  • Drain on paper towels.

Option B – Oven-baked (Lighter):

  • Preheat oven to 400°F (200°C).

  • Bake on a parchment-lined sheet for 20–22 minutes, flipping halfway.

  • Let cool slightly before slicing.

 Step 2: Make the Burger Patties

  1. In a bowl, combine ground meat, garlic powder, onion powder, salt, pepper, and optional Worcestershire.

  2. Form into 4 equal patties (slightly wider than your bannock rounds as they’ll shrink while cooking).

  3. Grill or pan-fry over medium heat for 4–5 minutes per side, or until cooked to your desired doneness.

  4. Add cheese slices during the last minute, if using.

 Step 3: Assemble the Bannock Burgers

  1. Split the bannock horizontally if thick enough; if thinner, use as-is like flatbread.

  2. Place a cooked burger patty on one bannock half.

  3. Pile on your toppings — lettuce, tomato, onions, pickles, sauces.

  4. Top with the second bannock half or fold like a taco-style flatbread.

 Storage Tips

  • Leftover bannock can be wrapped and stored at room temp for 1–2 days or frozen.

  • Cooked patties keep in the fridge for up to 3 days.

  • Reheat in a skillet or oven for best texture.
