Ingredients:

For the Cake:

  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups finely grated carrots
  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1/2 cup chopped walnuts or pecans (optional)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

For the Cake:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix Dry Ingredients:
    • In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Add Wet Ingredients:
    • Add oil, eggs, grated carrots, crushed pineapple, shredded coconut, chopped nuts (if using), and vanilla extract to the dry ingredients. Mix until well combined.
  4. Divide Batter:
    • Divide the batter evenly between the prepared cake pans.
  5. Bake:
    • Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool:
    • Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

For the Cream Cheese Frosting:

  1. Prepare Cream Cheese Frosting:
    • In a large bowl, beat together softened cream cheese and butter until smooth and creamy.
  2. Add Sugar and Vanilla:
    • Gradually add powdered sugar, beating well after each addition. Add vanilla extract and continue to beat until the frosting is light and fluffy.
  3. Assemble the Cake:
    • Once the cakes are completely cooled, spread a layer of cream cheese frosting on top of one cake layer. Place the second cake layer on top and frost the entire cake with the remaining cream cheese frosting.
  4. Decorate (Optional):
    • Decorate the top of the cake with additional chopped nuts or shredded coconut if desired.
  5. Chill and Serve:
    • For best results, refrigerate the cake for at least an hour before serving. This allows the frosting to set.
