Wild Rice Mushroom Soup

Ingredients:

  • 1 cup wild rice, rinsed
  • 8 cups vegetable or chicken broth
  • 1/2 cup unsalted butter
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 pound cremini or white mushrooms, sliced
  • 1/2 cup all-purpose flour
  • 4 cups milk (whole or 2%)
  • 1 cup heavy cream
  • 2 teaspoons dried thyme
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish

Instructions:

  1. Cook Wild Rice:
    • In a large pot, combine the wild rice and 4 cups of broth. Bring to a boil, then reduce heat, cover, and simmer for 45-50 minutes or until the rice is tender. Drain any excess liquid.
  2. Prepare Mushroom Base:
    • In a separate large pot, melt the butter over medium heat. Add chopped onions and cook until translucent.
  3. Add Mushrooms and Garlic:
    • Add sliced mushrooms and minced garlic to the pot. Cook until the mushrooms release their moisture and become golden brown.
  4. Make Roux:
    • Sprinkle flour over the mushroom mixture and stir well to create a roux. Cook for 2-3 minutes, allowing the flour to cook through.
  5. Gradually Add Liquids:
    • Gradually whisk in the remaining 4 cups of broth, milk, and heavy cream. Stir continuously to avoid lumps.
  6. Simmer and Season:
    • Bring the mixture to a simmer, then add thyme, salt, and black pepper. Simmer for 10-15 minutes, allowing the soup to thicken.
  7. Combine with Wild Rice:
    • Add the cooked wild rice to the soup and stir to combine. Simmer for an additional 10 minutes to allow the flavors to meld.
  8. Adjust Seasoning:
    • Taste and adjust seasoning as needed. Add more salt and pepper if desired.
  9. Garnish and Serve:
    • Ladle the soup into bowls and garnish with chopped fresh parsley.
