Air Fryer Fried Rice with Chicken and Veggies

Ingredients:

  • 2 cups cooked rice (preferably chilled)
  • 1 chicken breast, diced
  • 1 cup mixed vegetables (such as peas, carrots, and corn)
  • 2 eggs, beaten
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions:

  1. Preheat your air fryer to 370°F (187°C).
  2. Heat the vegetable oil in a skillet over medium heat. Add the diced chicken breast and cook until browned and cooked through, about 5-6 minutes.
  3. Add the minced garlic to the skillet and cook for an additional 1-2 minutes, until fragrant.
  4. Push the chicken and garlic to one side of the skillet and add the beaten eggs to the empty side. Scramble the eggs until cooked through, then mix them together with the chicken.
  5. Add the mixed vegetables to the skillet and cook for another 2-3 minutes, until heated through.
  6. Add the cooked rice to the skillet, breaking up any clumps with a spatula. Stir in the soy sauce and sesame oil, mixing well to coat the rice and vegetables. Cook for another 2-3 minutes to heat everything through.
  7. Transfer the fried rice mixture to the air fryer basket. Spread it out evenly to ensure even cooking.
  8. Air fry the fried rice at 370°F (187°C) for 8-10 minutes, shaking the basket halfway through cooking, until the rice is crispy and golden brown.
  9. Once cooked, remove the fried rice from the air fryer and transfer it to a serving dish.
  10. Garnish the fried rice with chopped green onions and sesame seeds, if desired.
  11. Serve hot and enjoy your delicious air fryer fried rice with chicken and veggies!
