Cheesecake Bites

Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 2 tablespoons sugar
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/2 cup sour cream
  • 1/2 cup mini chocolate chips

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 325°F (163°C). Line a mini muffin tin with paper liners.
  2. Prepare the Crust:
    • In a bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated.
    • Press a tablespoon of the mixture into the bottom of each muffin cup to create the crust.
  3. Prepare the Filling:
    • In a large bowl, beat the cream cheese until smooth.
    • Add sugar and continue to beat until well combined.
    • Beat in eggs one at a time, ensuring each is fully incorporated.
    • Mix in vanilla extract.
    • Gradually add flour and beat until just combined.
    • Fold in sour cream and mini chocolate chips.
  4. Fill the Muffin Cups:
    • Spoon the cream cheese mixture over the crust in each muffin cup, filling almost to the top.
  5. Bake:
    • Bake in the preheated oven for 18-20 minutes or until the edges are set and the centers are slightly jiggly.
  6. Cool and Chill:
    • Allow the cheesecake bites to cool in the muffin tin for 10 minutes, then transfer them to a wire rack to cool completely.
    • Refrigerate the cheesecake bites for at least 2 hours or until fully chilled.
  7. Serve:
    • Once chilled, remove the cheesecake bites from the fridge.
    • Optionally, garnish with additional mini chocolate chips or a dollop of whipped cream.
  8. Enjoy:
