Air fryer Lemon drizzle cake

Ingredients:

For the Cake:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk
  • Zest of 2 lemons
  • 1 tablespoon lemon juice

For the Lemon Drizzle:

  • 1/4 cup fresh lemon juice
  • 1/4 cup granulated sugar

For the Glaze (optional):

  • 1 cup powdered sugar
  • 2-3 tablespoons fresh lemon juice

Instructions:

  1. Preheat your air fryer to 325°F (160°C) for 5 minutes.
  2. Grease and flour a 7-inch round cake pan that fits into your air fryer basket.
  3. In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  4. In another bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.
  5. Beat in the eggs one at a time until well combined.
  6. Add the lemon zest and lemon juice to the wet mixture and mix until incorporated.
  7. Gradually add the dry flour mixture to the wet mixture, alternating with the milk, and mix until smooth and combined. Be careful not to overmix.
  8. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  9. Place the cake pan in the preheated air fryer basket. Cook the cake at 325°F (160°C) for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  10. While the cake is baking, prepare the lemon drizzle by combining the fresh lemon juice and granulated sugar in a small bowl. Stir until the sugar dissolves.
  11. Once the cake is baked, remove it from the air fryer and let it cool in the pan for 10 minutes.
  12. While the cake is still warm, poke several holes in the top using a skewer or fork. Pour the lemon drizzle mixture evenly over the warm cake, allowing it to soak in.
  13. Let the cake cool completely in the pan before removing it.
  14. If desired, prepare the glaze by whisking together the powdered sugar and fresh lemon juice until smooth. Drizzle the glaze over the cooled cake.
  15. Slice the lemon drizzle cake and serve.
