Zucchini Patties

Ingredients:

  • 2 medium-sized zucchinis, grated
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs, beaten
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for frying

Instructions:

1. Grate Zucchinis:

  • Wash and grate the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.

2. Prepare Mixture:

  • In a large mixing bowl, combine the grated zucchini, breadcrumbs, Parmesan cheese, beaten eggs, minced garlic, chopped parsley, dried oregano, salt, and pepper. Mix well until all ingredients are evenly combined.

3. Shape into Patties:

  • Take a small portion of the mixture and shape it into a patty using your hands. Make sure the patties are compact to prevent them from falling apart during cooking.

4. Heat Olive Oil:

  • In a large skillet, heat olive oil over medium heat. Ensure the oil is hot but not smoking.

5. Fry the Patties:

  • Carefully place the zucchini patties in the hot oil and cook for about 3-4 minutes on each side or until they are golden brown and crispy. Cook in batches to avoid overcrowding the skillet.

6. Drain Excess Oil:

  • Once the patties are cooked, transfer them to a plate lined with paper towels to drain any excess oil.

7. Serve:

  • Serve the zucchini patties warm as a delicious appetizer or a side dish. You can also serve them with a dipping sauce of your choice, such as tzatziki or marinara.
