  • 1 medium carrot, grated
  • 1 small onion, finely sliced
  • 2 cloves garlic, minced
  • 2 green onions, thinly sliced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley

For the Omelette

  • 6 large eggs
  • 2 tablespoons milk
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh chives or parsley
  • 1 tablespoon butter or olive oil for cooking

Optional Additions

  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • ½ cup cooked shredded chicken
  • ¼ cup crumbled feta cheese
  • Fresh spinach leaves
  • Sliced mushrooms

Equipment Needed

  • Large skillet
  • Mixing bowls
  • Whisk
  • Spatula
  • Cutting board
  • Chef’s knife
  • Measuring cups and spoons
  • Serving platter

Instructions

Step 1: Prepare the Filling

Heat the olive oil in a large skillet over medium heat.

Add the sliced onion and cook for 3–4 minutes, stirring occasionally until softened.

Add the garlic and cook for 30 seconds until fragrant.

Stir in the shredded cabbage and grated carrot.

Season with:

  • Salt
  • Black pepper
  • Paprika
  • Oregano
  • Red pepper flakes (if using)

Cook for 8–10 minutes, stirring occasionally, until the vegetables are tender but still slightly crisp.

Stir in the green onions and fresh parsley, then remove the filling from the heat and allow it to cool slightly.

Step 2: Prepare the Egg Mixture

In a large bowl, whisk together:

  • Eggs
  • Milk
  • Salt
  • Black pepper
  • Chopped chives or parsley

Whisk until smooth and well combined.

Step 3: Cook the Omelette

Heat a nonstick skillet over medium-low heat and lightly grease it with butter or olive oil.

Pour about one-quarter of the egg mixture into the skillet, tilting the pan to spread it into a thin, even layer.

Cook for 2–3 minutes, or until the eggs are mostly set but still slightly soft on top.

Avoid overcooking to ensure the omelette remains flexible for rolling.

Transfer the omelette to a plate and repeat until you have four thin omelettes.

Step 4: Assemble the Rolls

Place one omelette on a clean work surface.

Spread a portion of the cabbage filling evenly across the center.

If using cheese, sprinkle it over the filling.

Carefully roll the omelette tightly, enclosing the filling.

Repeat with the remaining omelettes.

Step 5: Finish Cooking

Return the rolled omelettes to the skillet over low heat.

Cook for 2–3 minutes, turning gently to warm the filling and lightly brown the outside.

If using cheese, cover the skillet for the last minute to allow it to melt completely.

Step 6: Slice and Serve

Transfer the rolls to a cutting board and let them rest for 2 minutes.

Slice each roll into two pieces and arrange them on a serving platter.

Garnish with fresh parsley, chives, or green onions.

Serve immediately.

Tips for Perfect Cabbage Omelette Rolls

  • Slice the cabbage finely for a tender filling.
  • Cook the vegetables until just tender to preserve their texture.
  • Keep the omelettes thin and flexible to prevent cracking.
  • Use a nonstick skillet for easy flipping and rolling.
  • Allow the filling to cool slightly before assembling to prevent the eggs from becoming soggy.
  • Avoid overfilling the rolls to make rolling easier.
