Ingredients:

  • 1 can (15 oz) cannellini beans, drained and rinsed (optional)
  • 2 cups chopped kale or spinach
  • Fresh parsley for garnish (optional)
  • Grated Parmesan cheese for serving (optional)

Instructions:

  1. Sauté Aromatics:
    • In a large pot, heat olive oil over medium heat. Add diced onions, sliced carrots, chopped celery, and minced garlic. Sauté until the vegetables are softened.
  2. Add Cabbage:
    • Add the chopped cabbage to the pot. Stir and cook for a few minutes until the cabbage begins to wilt.
  3. Incorporate Tomatoes and Broth:
    • Pour in the diced tomatoes (with their juice) and add the vegetable or chicken broth to the pot. Stir well to combine.
  4. Season the Soup:
    • Add dried thyme, dried oregano, bay leaf, salt, and black pepper to the pot. Stir and bring the soup to a simmer.
  5. Simmer:
    • Reduce the heat to low, cover the pot, and let the soup simmer for about 20-25 minutes or until the vegetables are tender.
  6. Add Beans and Greens:
    • If using cannellini beans, add them to the soup. Then, stir in the chopped kale or spinach. Cook for an additional 5-7 minutes until the greens are wilted.
  7. Adjust Seasoning:
    • Taste the soup and adjust the seasoning if needed. Add more salt and pepper according to your preference.
  8. Serve:
    • Ladle the hearty cabbage soup into bowls. Garnish with fresh parsley and grated Parmesan cheese if desired. Serve hot.
