Cajun seafood pasta

Ingredients
- Pasta:
- 1 pound fettuccine or linguine
- 1 tablespoon salt (for pasta water)
- Cajun Sauce:
- 2 tablespoons olive oil
- 1 pound shrimp, peeled and deveined
- 1 pound crawfish tails or scallops
- 1/2 pound andouille sausage, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 4 cloves garlic, minced
- 2 cups heavy cream
- 1 cup chicken broth
- 1 tablespoon Cajun seasoning
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional, for extra heat)
- Salt and pepper, to taste
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Pasta:
- Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
- Preheat the Blackstone Griddle:
- Preheat the Blackstone griddle to medium-high heat for about 5-10 minutes.
- Cook the Seafood and Sausage:
- Add 1 tablespoon of olive oil to the griddle. Spread it evenly with a spatula.
- Place the shrimp, crawfish (or scallops), and andouille sausage slices on the griddle. Cook until the shrimp turn pink and the sausage is browned, about 5-7 minutes. Remove from the griddle and set aside.
- Cook the Vegetables:
- Add the remaining olive oil to the griddle.
- Place the sliced bell peppers and onions on the griddle. Cook until they start to soften, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Make the Cajun Sauce:
- Pour the heavy cream and chicken broth over the vegetables on the griddle. Stir to combine.
- Sprinkle the Cajun seasoning, paprika, and cayenne pepper (if using) over the sauce. Stir well.
- Bring the sauce to a simmer and let it thicken slightly, about 5-7 minutes.
- Combine Everything:
- Return the cooked shrimp, crawfish (or scallops), and andouille sausage to the griddle.
- Add the cooked pasta to the griddle. Toss everything together to coat the pasta with the sauce.
- Sprinkle the grated Parmesan cheese over the pasta and stir to combine. Cook for another 2-3 minutes until everything is heated through.
- Season and Serve:
- Season with salt and pepper to taste.
- Garnish with freshly chopped parsley.
