Cajun seafood pasta

Ingredients

  • Pasta:
    • 1 pound fettuccine or linguine
    • 1 tablespoon salt (for pasta water)
  • Cajun Sauce:
    • 2 tablespoons olive oil
    • 1 pound shrimp, peeled and deveined
    • 1 pound crawfish tails or scallops
    • 1/2 pound andouille sausage, sliced
    • 1 red bell pepper, sliced
    • 1 yellow bell pepper, sliced
    • 1 green bell pepper, sliced
    • 1 medium onion, sliced
    • 4 cloves garlic, minced
    • 2 cups heavy cream
    • 1 cup chicken broth
    • 1 tablespoon Cajun seasoning
    • 1 teaspoon paprika
    • 1/2 teaspoon cayenne pepper (optional, for extra heat)
    • Salt and pepper, to taste
    • 1/2 cup grated Parmesan cheese
    • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Preheat the Blackstone Griddle:
    • Preheat the Blackstone griddle to medium-high heat for about 5-10 minutes.
  3. Cook the Seafood and Sausage:
    • Add 1 tablespoon of olive oil to the griddle. Spread it evenly with a spatula.
    • Place the shrimp, crawfish (or scallops), and andouille sausage slices on the griddle. Cook until the shrimp turn pink and the sausage is browned, about 5-7 minutes. Remove from the griddle and set aside.
  4. Cook the Vegetables:
    • Add the remaining olive oil to the griddle.
    • Place the sliced bell peppers and onions on the griddle. Cook until they start to soften, about 5 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
  5. Make the Cajun Sauce:
    • Pour the heavy cream and chicken broth over the vegetables on the griddle. Stir to combine.
    • Sprinkle the Cajun seasoning, paprika, and cayenne pepper (if using) over the sauce. Stir well.
    • Bring the sauce to a simmer and let it thicken slightly, about 5-7 minutes.
  6. Combine Everything:
    • Return the cooked shrimp, crawfish (or scallops), and andouille sausage to the griddle.
    • Add the cooked pasta to the griddle. Toss everything together to coat the pasta with the sauce.
    • Sprinkle the grated Parmesan cheese over the pasta and stir to combine. Cook for another 2-3 minutes until everything is heated through.
  7. Season and Serve:
    • Season with salt and pepper to taste.
    • Garnish with freshly chopped parsley.
