Keto Philly Cheesesteak Roll

Prep Time: 10 minutes
Cook Time: 15–18 minutes
Total Time: 30 minutes
Difficulty Level: Easy
Cooking Intensity: Medium heat (stovetop sauté + quick melt)
Servings: 4 (2 roll-ups per serving)

Ingredients

For the Filling:

  • 1 lb thinly shaved ribeye steak (or sirloin)

  • 1 tablespoon olive oil or butter

  • ½ medium onion, thinly sliced

  • ½ green bell pepper, thinly sliced

  • ½ teaspoon garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

For the Roll-Ups:

  • 8 slices provolone cheese
(Or mozzarella for a milder flavor)

Optional Add-Ins:

  • 4 oz sliced mushrooms

  • 1 tablespoon Worcestershire sauce (check for no added sugar)

  • Red pepper flakes for heat

Equipment Needed

  • Large skillet (preferably cast iron)

  • Spatula or tongs

  • Parchment paper

  • Baking sheet (optional for melting cheese evenly)

Step-by-Step Instructions

Step 1: Sauté the Vegetables (Medium Intensity)

Heat olive oil or butter in a large skillet over medium heat.

Add sliced onions and bell peppers. Cook for 5–7 minutes, stirring occasionally, until softened and lightly caramelized.

If using mushrooms, add them during the last 3–4 minutes of cooking.

Remove vegetables from skillet and set aside.

Intensity: Medium heat
Time: 7 minutes

Step 2: Cook the Steak (Medium–High Intensity)

In the same skillet, increase heat slightly to medium-high.

Add shaved beef in a single layer. Season with garlic powder, salt, and pepper.

Cook for 3–5 minutes, stirring occasionally, until browned and cooked through.

If desired, add a splash of Worcestershire sauce during the last minute of cooking.

Turn heat down to low and mix the vegetables back into the beef.

Intensity: Medium-high heat
Time: 5 minutes

Step 3: Melt the Cheese (Low–Moderate Intensity)

You have two options:

Option A: Skillet Method

Lower heat to low. Place provolone slices directly over the hot beef mixture. Cover skillet with a lid and allow cheese to melt for 1–2 minutes.

Option B: Oven Method (Cleaner Roll-Ups)

Preheat oven to 375°F.

Place cheese slices spaced apart on a parchment-lined baking sheet. Bake for 5–7 minutes, until melted and slightly bubbly but not browned.

Remove and let cool for 30–60 seconds until flexible.

Intensity: Low heat
Time: 5–7 minutes

Step 4: Form the Roll-Ups (Low Intensity)

If using skillet method:
Scoop a portion of beef mixture onto each melted cheese section and gently roll.

If using oven method:
Place a scoop of beef mixture onto each melted cheese slice. Carefully roll tightly using a spatula.

Allow to rest for 1–2 minutes to set.

Intensity: No direct heat
Time: 5 minutes

Cooking Tips for Perfect Results

✔️ Use Thinly Shaved Beef

Ribeye gives the most authentic flavor and tenderness.

✔️ Avoid Overcrowding

Crowding the skillet will steam the meat instead of searing it.

✔️ Don’t Overbake the Cheese

Overcooking makes cheese brittle instead of flexible.

✔️ Let It Cool Slightly Before Rolling

This prevents tearing and helps maintain structure.

Flavor Variations

🧀 Extra Cheesy

Add a layer of cream cheese to the beef mixture for a richer filling.

🌶 Spicy Kick

Add sliced jalapeños or hot sauce.

🥓 Bacon Boost

Mix in crispy chopped bacon for extra flavor and fat.

🥬 Lettuce Wrap Version

Skip melting cheese flat and wrap filling in romaine leaves with melted cheese inside.
