Sourdough Discard Crackers Recipe

Ingredients:

  • 1 cup (240g) sourdough starter discard (unfed)
  • 1/4 cup (60ml) olive oil
  • 1 cup (120g) all-purpose flour (plus more for rolling)
  • 1/2 tsp salt
  • 1/4 tsp baking powder (optional, for a slightly puffier cracker)
  • 1-2 tbsp dried herbs (such as rosemary, thyme, or oregano) or 1 tsp garlic powder (optional)
  • Flaky sea salt, for topping (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
    • Line a large baking sheet with parchment paper.
  2. Mix the Dough:
    • In a medium bowl, combine the sourdough starter discard, olive oil, flour, salt, and any optional herbs or spices.
    • Mix until a smooth, slightly sticky dough forms. If the dough is too sticky, add a little more flour, one tablespoon at a time, until it comes together.
  3. Roll Out the Dough:
    • Lightly flour a clean surface and roll out the dough as thinly as possible, about 1/8 inch thick. The thinner the dough, the crispier the crackers will be.
    • Transfer the rolled-out dough to the prepared baking sheet.
  4. Cut the Crackers:
    • Use a pizza cutter or a sharp knife to cut the dough into squares or rectangles. You can also use cookie cutters for fun shapes.
    • Prick each cracker with a fork to prevent puffing during baking.
  5. Top the Crackers:
    • Brush the dough lightly with olive oil and sprinkle with flaky sea salt or any additional toppings like sesame seeds, poppy seeds, or grated cheese.
  6. Bake the Crackers:
    • Bake in the preheated oven for 20-25 minutes, or until the crackers are golden brown and crispy.
    • If some crackers are baking faster than others, remove them from the sheet and continue baking the rest.
