Cheese tortellini

Ingredients

  • 1 pound cheese tortellini
  • 2 tablespoons olive oil
  • 1 pound kielbasa, sliced
  • 1 pound chicken breast, cut into bite-sized pieces
  • 1/2 pound shrimp, peeled and deveined
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 8 ounces fresh mozzarella, cubed
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Cook the Tortellini:
    • Bring a large pot of salted water to a boil. Cook the cheese tortellini according to the package instructions. Drain and set aside.
  2. Preheat the Blackstone Griddle:
    • Preheat the Blackstone griddle to medium-high heat. Allow it to heat up for about 5-10 minutes.
  3. Cook the Kielbasa:
    • Add 1 tablespoon of olive oil to the griddle. Spread it evenly with a spatula.
    • Place the sliced kielbasa on the griddle. Cook until browned, about 5 minutes. Remove from the griddle and set aside.
  4. Cook the Chicken:
    • Add another tablespoon of olive oil to the griddle.
    • Place the chicken pieces on the griddle. Cook until browned and cooked through, about 7-10 minutes. Remove from the griddle and set aside.
  5. Cook the Shrimp:
    • Place the shrimp on the griddle. Cook until pink and opaque, about 3-4 minutes. Remove from the griddle and set aside.
  6. Cook the Vegetables:
    • Add the sliced mushrooms and bell peppers to the griddle. Cook until they start to soften, about 5 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
  7. Combine Everything on the Griddle:
    • Return the kielbasa, chicken, and shrimp to the griddle. Add the fresh spinach and stir until wilted.
    • Pour the chicken broth and heavy cream over the mixture. Stir to combine.
    • Add the cooked tortellini and fresh mozzarella cubes. Stir gently to combine.
  8. Season and Serve:
    • Sprinkle with grated Parmesan cheese and Italian seasoning. Stir well.
    • Season with salt and pepper to taste.
    • Continue to cook until everything is heated through and the cheese is melted, about 5 more minutes.
  9. Garnish:
    • Garnish with freshly chopped parsley, if desired.
