Ground beef and peppers skillet

Ingredients

  • 1 lb (450g) ground beef
  • 1 tablespoon olive oil
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare the Ingredients:
    • Dice the red, yellow, and green bell peppers and onion.
    • Mince the garlic.
  2. Cook the Ground Beef:
    • In a large skillet, heat the olive oil over medium-high heat.
    • Add the ground beef to the skillet and cook, breaking it up with a spatula, until it is browned and cooked through, about 5-7 minutes.
    • Drain any excess fat from the skillet.
  3. Add the Vegetables:
    • Add the diced bell peppers and onion to the skillet with the ground beef.
    • Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.
  4. Add the Garlic and Spices:
    • Add the minced garlic to the skillet and cook for 1 minute, until fragrant.
    • Stir in the smoked paprika, ground cumin, chili powder, salt, and pepper.
  5. Add the Tomatoes:
    • Pour in the undrained can of diced tomatoes and stir to combine.
    • Bring the mixture to a simmer and cook for 5 minutes, allowing the flavors to meld together.
  6. Finish and Serve:
    • If using, sprinkle the shredded cheddar cheese over the top of the skillet and cover for 2-3 minutes, until the cheese is melted.
    • Remove from heat and sprinkle with chopped fresh parsley.
    • Serve immediately.
