  • 4 oz (115g) egg noodles
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Prepare the Ingredients:
    • Dice the onion and mince the garlic.
    • Clean and slice the mushrooms.
  2. Sauté the Vegetables:
    • In a large pot or Dutch oven, heat the butter and olive oil over medium heat.
    • Add the diced onion and cook for 3-4 minutes, until it begins to soften.
    • Add the minced garlic and cook for an additional 1 minute, until fragrant.
  3. Cook the Mushrooms:
    • Add the sliced mushrooms to the pot and cook for 5-7 minutes, until they release their moisture and begin to brown.
    • Stir in the dried thyme and rosemary, cooking for another minute.
  4. Make the Broth:
    • Sprinkle the flour over the mushroom mixture and stir well to coat.
    • Gradually pour in the chicken or vegetable broth, stirring constantly to avoid lumps.
    • Bring the mixture to a simmer and cook for 5 minutes, allowing it to thicken slightly.
  5. Add the Cream and Milk:
    • Reduce the heat to low and stir in the heavy cream and milk.
    • Season with salt and pepper to taste.
  6. Cook the Noodles:
    • Add the egg noodles to the pot and cook according to the package instructions, usually about 8-10 minutes, until the noodles are tender.
  7. Finish and Serve:

    • Remove the pot from heat and stir in the chopped fresh parsley if using.
