Ingredients:

  • 4 large eggs, at room temperature
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/4 cup honey
  • 1/4 cup milk
  • 1 tablespoon vegetable oil
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 325°F (163°C). Line a rectangular baking pan (about 9×5 inches) with parchment paper.
  2. Prepare the Eggs:
    • In a large mixing bowl, beat the eggs until they become frothy and slightly pale in color.
  3. Add Sugar Gradually:
    • Gradually add the granulated sugar to the beaten eggs while continuing to beat. Beat until the mixture becomes thick and pale, and the sugar is well incorporated.
  4. Sift the Flour:
    • Sift the all-purpose flour into the egg and sugar mixture in small batches. Gently fold the flour into the batter using a spatula. Do not overmix; just fold until no flour streaks remain.
  5. Combine Honey, Milk, and Oil:
    • In a separate bowl, mix together honey, milk, vegetable oil, and vanilla extract. Add this mixture to the batter and gently fold until well combined.
  6. Pour Batter into the Pan:
    • Pour the batter into the prepared baking pan, spreading it evenly.
  7. Bake:
    • Bake in the preheated oven for about 45 minutes or until a toothpick inserted into the center comes out clean.
  8. Cooling:
    • Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  9. Slice and Serve:
    • Once cooled, slice the Castella cake into squares or rectangles and serve.
