CHICKEN BACON RANCH QUESADILLA

Ingredients:

  • 2 large flour tortillas
  • 1 cup cooked and shredded chicken (rotisserie chicken works well)
  • 6 slices cooked bacon, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup ranch dressing (store-bought or homemade)
  • 2 tablespoons chopped fresh chives or green onions (optional)
  • Cooking spray or butter for greasing

Instructions:

  1. Prepare Ingredients:
    • Cook and shred the chicken if not already done. Cook the bacon until crispy and chop it into small pieces.
  2. Assemble Quesadillas:
    • Lay one flour tortilla flat on a clean surface.
    • Spread half of the shredded cheddar cheese evenly over one side of the tortilla.
    • Layer half of the shredded chicken and chopped bacon on top of the cheese.
    • Drizzle half of the ranch dressing over the chicken and bacon.
    • Sprinkle with half of the shredded mozzarella cheese and chopped fresh chives or green onions if using.
    • Fold the empty side of the tortilla over the filling to create a half-moon shape.
  3. Cook Quesadilla:
    • Heat a large skillet or griddle over medium heat and grease it lightly with cooking spray or butter.
    • Carefully transfer the assembled quesadilla to the skillet and cook for about 3-4 minutes per side, or until golden brown and the cheese is melted.
    • Press down gently with a spatula while cooking to help seal the quesadilla and ensure even melting of the cheese.
    • Repeat the same process for the second quesadilla using the remaining ingredients.
  4. Slice and Serve:
    • Remove the cooked quesadillas from the skillet and let them rest for a minute on a cutting board.
    • Use a sharp knife or pizza cutter to slice each quesadilla into wedges.
    • Serve the chicken bacon ranch quesadillas hot as a delicious appetizer, snack, or light meal. They pair well with salsa, guacamole, or sour cream for dipping.

Note:

  • Feel free to customize the quesadillas by adding other ingredients like diced tomatoes, sliced jalapeños, or black olives to the filling.
  • You can use a combination of your favorite cheeses such as Monterey Jack, pepper jack, or Swiss cheese for added flavor.
