CHICKEN BACON RANCH QUESADILLA

Ingredients:
- 2 large flour tortillas
- 1 cup cooked and shredded chicken (rotisserie chicken works well)
- 6 slices cooked bacon, chopped
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup ranch dressing (store-bought or homemade)
- 2 tablespoons chopped fresh chives or green onions (optional)
- Cooking spray or butter for greasing
Instructions:
- Prepare Ingredients:
- Cook and shred the chicken if not already done. Cook the bacon until crispy and chop it into small pieces.
- Assemble Quesadillas:
- Lay one flour tortilla flat on a clean surface.
- Spread half of the shredded cheddar cheese evenly over one side of the tortilla.
- Layer half of the shredded chicken and chopped bacon on top of the cheese.
- Drizzle half of the ranch dressing over the chicken and bacon.
- Sprinkle with half of the shredded mozzarella cheese and chopped fresh chives or green onions if using.
- Fold the empty side of the tortilla over the filling to create a half-moon shape.
- Cook Quesadilla:
- Heat a large skillet or griddle over medium heat and grease it lightly with cooking spray or butter.
- Carefully transfer the assembled quesadilla to the skillet and cook for about 3-4 minutes per side, or until golden brown and the cheese is melted.
- Press down gently with a spatula while cooking to help seal the quesadilla and ensure even melting of the cheese.
- Repeat the same process for the second quesadilla using the remaining ingredients.
- Slice and Serve:
- Remove the cooked quesadillas from the skillet and let them rest for a minute on a cutting board.
- Use a sharp knife or pizza cutter to slice each quesadilla into wedges.
- Serve the chicken bacon ranch quesadillas hot as a delicious appetizer, snack, or light meal. They pair well with salsa, guacamole, or sour cream for dipping.
Note:
- Feel free to customize the quesadillas by adding other ingredients like diced tomatoes, sliced jalapeños, or black olives to the filling.
