Ingredients:
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 8 cups chicken broth (homemade or store-bought)
- 2 cups cooked, shredded chicken (from a rotisserie chicken or poached chicken breasts)

Instructions:
- Sauté the Vegetables:
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes, until the vegetables start to soften.
- Add the minced garlic and cook for 1 more minute, until fragrant.
