Instructions

Step 2: Add the Marshmallows

  1. Place the rainbow mini marshmallows in a large bowl.

  2. Pour the cooled chocolate mixture over the marshmallows and stir gently to coat them evenly.

    Make sure the chocolate mixture is not hot — warm is fine, but too much heat will cause the marshmallows to melt or lose their color.

Step 3: Shape into a Roll

  1. Lay a large sheet of plastic wrap or parchment paper flat on your work surface.

  2. Spoon the chocolate-marshmallow mixture onto the center and shape it into a log, about 2½ inches in diameter.

  3. Wrap tightly in the plastic/parchment, rolling and shaping into a firm cylinder. Twist the ends closed like a candy wrapper.

  4. Place on a tray or baking sheet and refrigerate for at least 2–3 hours, or until fully firm.

Step 4: Slice and Serve

  1. Once chilled and set, remove the log from the fridge and unwrap it.

  2. If desired, roll the log in shredded coconut for a pretty and classic finish.

  3. Use a sharp knife to slice into ½-inch rounds. Wipe the knife between cuts for clean slices.
