  1. Rinse and scrub the clams under cold water. Discard any that are cracked or stay open after tapping.

  3. Remove clams as they open to prevent overcooking. Discard any that do not open.

  4. Let cool slightly, then twist and discard the top shell, leaving the clam in the bottom half.

  5. Arrange the half-shell clams on a foil-lined baking sheet or oven-safe platter.

Step 2: Make the Casino Topping

  1. In a skillet over medium heat, cook chopped bacon until crispy. Remove and drain on paper towels.

  2. Discard all but 1 tablespoon of bacon fat. Add butter to the pan.

  3. Sauté bell peppers and garlic for 2–3 minutes until soft and fragrant.

  4. Stir in breadcrumbs, Parmesan (if using), parsley, lemon juice, cooked bacon, and a pinch of salt and pepper.
