 For the Clams:

  • 24 fresh littleneck clams (scrubbed clean)

  • ½ cup dry white wine or water (for steaming)

Step 1: Prep and Steam the Clams

  1. Rinse and scrub the clams under cold water. Discard any that are cracked or stay open after tapping.

  2. Place the clams in a large pot with the white wine or water. Cover and steam over medium heat for 5–7 minutes, just until they open.

  3. Remove clams as they open to prevent overcooking. Discard any that do not open.

  4. Let cool slightly, then twist and discard the top shell, leaving the clam in the bottom half.

  5. Arrange the half-shell clams on a foil-lined baking sheet or oven-safe platter.

Step 2: Make the Casino Topping

  1. In a skillet over medium heat, cook chopped bacon until crispy. Remove and drain on paper towels.

  2. Discard all but 1 tablespoon of bacon fat. Add butter to the pan.

  3. Sauté bell peppers and garlic for 2–3 minutes until soft and fragrant.

  4. Stir in breadcrumbs, Parmesan (if using), parsley, lemon juice, cooked bacon, and a pinch of salt and pepper.

  5. Cook for 1–2 more minutes, just until the mixture is golden and holds together slightly.

  6. Optional: Add a dash of hot sauce for extra kick.

Step 3: Assemble the Clams

  1. Spoon about 1 teaspoon of the casino mixture onto each clam.

  2. Press gently to pack and mound the topping slightly.
