Rich, creamy, and decadent, this Classic New York Style Cheesecake is the ultimate dessert for any occasion. With its smooth texture and buttery graham cracker crust, it’s a timeless favorite that never fails to impress.

Ingredients

For the Crust:

  • 2 cups graham cracker crumbs (about 16 crackers)
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar

For the Cheesecake Filling:

  • 4 (8-ounce) packages cream cheese, softened
  • 1 ¼ cups granulated sugar
  • 4 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon juice (optional, for a slight tang)

For the Topping (Optional):

  • 1 cup sour cream
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract

Instructions

Step 1: Prepare the Crust

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until evenly combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan. Use the back of a spoon or a measuring cup to flatten it evenly.
  4. Bake the crust for 10 minutes. Remove from oven and let cool. Reduce oven temperature to 325°F (165°C).

Step 2: Make the Filling

  1. In a large bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and fluffy.
  2. Gradually add sugar and mix until well combined.
  3. Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
  4. Mix in sour cream, vanilla extract, and lemon juice until smooth.

Step 3: Assemble and Bake

  1. Pour the filling over the cooled crust, spreading evenly.
  2. Place the springform pan on a baking sheet to catch any drips.
  3. Bake for 1 hour to 1 hour 10 minutes, or until the center is slightly jiggly but the edges are set.

Step 4: Cool the Cheesecake

  1. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. This prevents cracking.
  2. Remove the cheesecake from the oven and let it cool completely at room temperature.

Step 5: Add the Topping (Optional)

  1. If using the sour cream topping, mix sour cream, powdered sugar, and vanilla extract in a small bowl until smooth.
  2. Spread the topping evenly over the cooled cheesecake.

Step 6: Chill and Serve

  1. Cover the cheesecake and refrigerate for at least 6 hours, preferably overnight.
  2. Before serving, run a knife around the edge of the pan to loosen the cheesecake, then release the springform.
  3. Slice and serve plain or with fresh berries, chocolate drizzle, or caramel sauce.

Tips:

  • For the best texture, bring all ingredients to room temperature before mixing.
  • Use a water bath to prevent cracking: wrap the springform pan in foil and place it in a larger pan filled with 1 inch of hot water during baking.
  • Slice the cheesecake with a knife dipped in hot water for clean cuts.
