Copycat Popeye’s Cajun Rice Recipe

Ingredients:

  • 1 cup long-grain white rice
  • 2 cups chicken broth (or water)
  • 1/2 lb ground beef or ground pork (you can use a combination for extra flavor)
  • 1/4 cup finely chopped chicken liver (optional for authentic flavor)
  • 1/2 cup finely diced onion
  • 1/4 cup finely diced celery
  • 1/4 cup finely diced green bell pepper
  • 2 cloves garlic, minced
  • 2 tsp Cajun seasoning (or to taste)
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1/4 tsp thyme
  • 1/4 tsp cayenne pepper (optional for extra heat)
  • 2 tbsp butter or oil
  • Salt to taste

Instructions:

  1. Cook the Rice:
    • In a medium saucepan, combine the rice and chicken broth (or water) and bring to a boil.
    • Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed. Set aside and fluff with a fork.
  2. Cook the Meat and Vegetables:
    • In a large skillet, melt the butter or oil over medium heat.
    • Add the ground beef (and chicken liver, if using), and cook until browned, breaking it apart with a spoon.
    • Add the diced onion, celery, green bell pepper, and minced garlic. Cook for another 5-7 minutes until the vegetables are softened.
  3. Add Seasonings:
    • Stir in the Cajun seasoning, paprika, black pepper, thyme, and cayenne pepper (if using). Adjust the seasoning to your taste. Cook for 1-2 more minutes to let the spices toast and release their flavors.
  4. Combine the Rice:
    • Add the cooked rice to the skillet with the meat and vegetable mixture. Stir to combine everything thoroughly, letting the rice absorb the flavors.
    • Cook for an additional 3-5 minutes to ensure the rice is well-seasoned and heated through.
  5. Serve:
    • Taste and adjust the salt or seasoning if needed. Serve hot as a side dish to complement your main meal, or enjoy it on its own!
