Ingredients

  • For the Crust:
    • 1 1/2 cups all-purpose flour
    • 1/2 cup unsalted butter, cold and cubed
    • 1/4 cup ice water
    • 1/2 tsp salt
  • For the Filling:
    • 4 large onions, thinly sliced
    • 3 tbsp olive oil
    • 2 tbsp unsalted butter
    • 1 tsp sugar
    • 1/2 tsp salt
    • 1/4 tsp black pepper
    • 1/4 cup heavy cream
    • 1/2 cup grated Gruyère cheese
    • 2 large eggs, beaten
    • Fresh thyme leaves for garnish (optional)

Instructions

  1. Prepare the Crust:
    • In a food processor, combine the flour and salt. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs. Gradually add the ice water, pulsing until the dough comes together.
    • Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Caramelize the Onions:
    • In a large skillet, heat the olive oil and butter over medium heat. Add the thinly sliced onions and cook, stirring occasionally, until they are soft and translucent, about 15 minutes.
    • Sprinkle the onions with sugar, salt, and pepper. Continue to cook, stirring frequently, until the onions are golden brown and caramelized, about 30 minutes. Set aside to cool slightly.
  3. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  4. Prepare the Tart Shell:
    • On a lightly floured surface, roll out the chilled dough to fit a 9-inch tart pan. Press the dough into the tart pan and trim the edges. Prick the bottom of the crust with a fork.
    • Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment paper and bake for an additional 10 minutes until the crust is golden. Let cool slightly.
  5. Assemble the Tart:
    • In a mixing bowl, combine the caramelized onions, heavy cream, grated Gruyère cheese, and beaten eggs. Mix well to combine.
    • Pour the onion mixture into the pre-baked tart shell, spreading it out evenly.
  6. Bake the Tart:
    • Bake the tart in the preheated oven for 25-30 minutes, or until the filling is set and the top is golden brown.
  7. Serve:
    • Let the tart cool for a few minutes before slicing. Garnish with fresh thyme leaves if desired. Serve warm or at room temperature.
