Patty melts

Ingredients

  • 1.5 pounds ground beef
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 slices rye bread (or sourdough or your preferred bread)
  • 8 slices Swiss cheese (or American cheese)
  • 1 large onion, thinly sliced
  • 4 tablespoons butter, divided
  • 1 tablespoon olive oil
  • Optional: pickles, for serving

Instructions

  1. Preheat the Blackstone Griddle:
    • Preheat your Blackstone griddle to medium-high heat.
  2. Caramelize the Onions:
    • Add 2 tablespoons of butter and 1 tablespoon of olive oil to the griddle.
    • Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 10-15 minutes. Move the onions to the side of the griddle to keep warm.
  3. Form the Patties:
    • While the onions are cooking, season the ground beef with salt and pepper. Form the ground beef into 4 equal-sized patties, making them slightly larger than the bread slices to account for shrinkage during cooking.
  4. Cook the Patties:
    • Add the patties to the griddle and cook for about 4-5 minutes per side, or until they reach your desired level of doneness. Remove the patties from the griddle and set aside.
  5. Assemble the Patty Melts:
    • Place a slice of cheese on each slice of bread. Add a cooked patty on top of half of the bread slices with cheese.
    • Top each patty with caramelized onions and another slice of cheese.
    • Place another slice of bread on top to form a sandwich.
  6. Grill the Sandwiches:
    • Add the remaining 2 tablespoons of butter to the griddle. Once melted, place the assembled sandwiches on the griddle.
    • Cook the sandwiches for about 2-3 minutes per side, or until the bread is golden brown and crispy, and the cheese is melted.
  7. Serve:
    • Remove the patty melts from the griddle and let them rest for a minute before slicing them in half.
    • Serve with pickles on the side if desired.
