  • ½ cup pasta water (reserved from boiling)

 Preparation Steps

Step 1: Boil the Pasta

  1. Bring a large pot of salted water to a boil.

  2. Add the pasta and cook according to the package instructions until al dente (firm to the bite).

  3. Before draining, reserve ½ cup of the starchy pasta water and set aside.

  4. Drain the pasta and keep it warm.

Tip: Don’t overcook the pasta—it will continue to cook slightly when mixed into the hot sauce.


Step 2: Cook the Broccoli

While the pasta is boiling:

Step 3: Make the Creamy Sauce

  1. Lower the heat to medium-low.

  2. Pour in the heavy cream and stir to combine with the garlic, onion, and broccoli.

  3. Add the Parmesan cheese and cream cheese (if using), stirring continuously until both melt into the sauce.

  4. Season with salt, black pepper, and red pepper flakes (if using).

  5. Let the sauce simmer gently for 3–4 minutes until thickened.

Creamy Texture Hack: Blend half the broccoli mixture with a bit of cream or pasta water before adding back into the pan for a silkier sauce.

Step 4: Combine Pasta with Sauce

  1. Add the drained pasta to the skillet with the sauce.

  2. Pour in a bit of the reserved pasta water, a few tablespoons at a time, stirring well to coat the pasta evenly.

  3. Continue stirring until the sauce clings to the pasta. You may not need the full ½ cup of pasta water.

  4. Adjust seasoning if needed—more salt, pepper, or cheese depending on your taste.

Step 5: Garnish and Serve

  1. Plate the creamy broccoli pasta into bowls or serve family-style in a large serving dish.

  2. Sprinkle with extra Parmesan cheese and a little fresh parsley or basil.

  3. Add freshly cracked black pepper or lemon zest for a pop of flavor.

  4. Serve immediately while hot and creamy.
