  • Prep Time: 15 minutes
  • Cook Time: 5 minutes (for simple syrup)
  • Cooling Time: 20 minutes
  • Total Time: 40 minutes

Difficulty Level: Easy

Servings: 6 glasses

Ingredients

For the Lemonade

  • 2 large cucumbers
  • 1 cup freshly squeezed lemon juice (about 5–6 lemons)
  • ¾ cup granulated sugar
  • 1 cup water (for syrup)
  • 4 cups cold water
  • 2 cups ice cubes

Optional Garnishes

  • Lemon slices
  • Thin cucumber rounds
  • Fresh mint leaves
  • Lime slices
  • Fresh basil
  • Sparkling water for a fizzy version

Kitchen Equipment

  • Blender
  • Fine mesh strainer
  • Citrus juicer
  • Sharp knife
  • Cutting board
  • Saucepan
  • Large pitcher
  • Wooden spoon
  • Measuring cups

Step 1: Make the Simple Syrup

In a small saucepan, combine:

  • ¾ cup sugar
  • 1 cup water

Heat over medium heat while stirring until the sugar dissolves completely.

Do not boil vigorously.

Remove from heat and allow the syrup to cool completely.

Simple syrup blends much more smoothly into cold drinks than plain sugar.

Step 2: Prepare the Cucumbers

Wash the cucumbers thoroughly.

If using English cucumbers, peeling is optional.

For regular cucumbers, peeling removes bitterness.

Slice them into chunks suitable for blending.

Step 3: Blend

Place cucumber chunks into the blender.

Blend until completely smooth, about 1 minute on high speed.

You should have a smooth green puree.

Step 4: Strain

Pour the cucumber puree through a fine mesh sieve into a bowl.

Press gently with the back of a spoon to extract as much juice as possible.

Discard the remaining pulp or save it for smoothies.

Step 5: Juice the Lemons

Roll lemons on the counter before cutting.

Juice until you have approximately one cup of fresh lemon juice.

Remove any seeds.

Fresh lemons provide the best flavor.

Step 6: Assemble the Lemonade

In a large pitcher combine:

  • Fresh cucumber juice
  • Lemon juice
  • Simple syrup
  • Four cups cold water

Stir thoroughly.

Taste.

Adjust sweetness if desired by adding more syrup.

For a stronger lemon flavor, add extra lemon juice.

Step 7: Chill

Refrigerate for at least 20 minutes.

Cold lemonade develops a more balanced flavor.

Serve over plenty of ice.

Garnish

Top each glass with:

  • Lemon slices
  • Cucumber rounds
  • Fresh mint

Serve immediately.

Recipe Tips

  • Use seedless cucumbers for smoother juice.
  • Always use freshly squeezed lemons.
  • Chill ingredients before mixing.
  • Adjust sweetness according to taste.
  • Blend cucumbers thoroughly for maximum juice.
  • Strain twice for an extra smooth drink.
  • Add sparkling water just before serving.
  • Freeze cucumber slices for decorative ice cubes.

Health Benefits

Cucumbers are naturally high in water, making them excellent for hydration. They also provide small amounts of vitamin K, potassium, and antioxidants.

Fresh lemons are rich in vitamin C, which supports immune function and adds a bright, refreshing flavor.

Making lemonade at home allows you to control the amount of sugar and avoid artificial additives commonly found in bottled beverages.
