Depression Cake

Ingredients:

  • 1 1/2 cups (180g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/4 cup (30g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract
  • 1/3 cup (80ml) vegetable oil
  • 1 cup (240ml) water

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease an 8×8-inch (20x20cm) baking pan or line it with parchment paper.

2. Mix the Dry Ingredients:

  • In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until well combined.

3. Create Wells for Wet Ingredients:

  • In the dry mixture, make three small wells (indentations). Pour the vinegar into one well, the vanilla extract into the second well, and the vegetable oil into the third well.

4. Add Water and Mix:

  • Pour the water over everything in the bowl. Using a whisk or spoon, stir the ingredients together until smooth and fully combined. The batter will be thin.

5. Bake the Cake:

  • Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

6. Cool and Serve:

  • Remove the cake from the oven and let it cool completely in the pan before slicing. You can enjoy it plain, dusted with powdered sugar, or topped with frosting.
